February Recipe // Double Chocolate Raspberry Pavlova

This months recipe is in the spirit of this month’s holiday – Valentine’s Day! This is a delightfully unique dessert that is sure to delight your loved ones!!

Anyone who knows me, knows how much I really don’t like to bake. And even though I get into the holiday spirit with a baking day once a year in December, its really not my favorite thing. After 8 years working in a bakery, one can understand why. But this dessert was unlike any I’d ever baked before, so I thought I’d give it a try. It was a big hit in my house, so hopefully it is in yours too!

Double Chocolate Raspberry Pavlova

6 x Egg Whites
300g Caster sugar (Australian Recipe!! = Caster sugar is fine baking sugar = 20-21 Tablespoons or 1.3+ cups)
3 x tablespoons Belgian cocoa powder
1 x tablespoon good balsamic vinegar
50g good quality chocolate (70% cocoa solids), chopped into small pieces (just get a bar of good chocolate, sometimes it does have the grams measurements on the package)
3 punnets of fresh raspberries (3 of those green “baskets”)
500ml whipping cream, whipped and sweetened with a tablespoon of caster sugar (1 pint or 2 cups)

Preheat oven to 180˚C / 350 F

1. Place egg whites in the bowl of a mixer (I use a Kitchen Aid, find it excellent for meringues) and whisk until soft peaks form.

2. Using a tablespoon at a time, add sugar into egg white mixture and continue beating until the egg whites become stiff and glossy. Be careful not to over-beat as it can start to separate. The mixture is ready once it forms stiff, glossy peaks and you can hold the bowl upside down without any of it falling out. (I don’t normally test the latter as I’m familiar with meringue consistence but if you’ve never made one before, it’s worth giving it a try, once it stays put, you know you’re good to go.

3. Sift in the cocoa powder, add the vinegar and chopped up chocolate, using a large spoon slowly and carefully fold these into the egg white and sugar mixture until fully combined. the mixture will resemble a very light brown shade.

4. Line 2 large, flat oven trays with baking parchment – I find it a good tip to dab a little bit of the pavlova mixture underneath each corner of the paper as it helps it stick to the tray and avoids the paper slipping all over the place whilst you are loading on the mixture = very annoying..

5. Place a 9″ or 10″ dinnerplate on the middle of each tray and draw firmly around the edge with a pencil or pen to form a circle – this will act as a guide and ensure both pavlovas are the same size. Flip the paper over so the ink/pencil lead is touching the tray side as opposed to the pavlova side, you’ll still be able to see the line through the paper.

6. Load up each circle with the mixture, smoothing it out to the edge of the line you have just drawn, try to divide the mix equally so both have same volume of mix. I normally smooth out the mixture, but a Pavlova is not supposed to look perfect so feel free to form a few points and peaks if you want, when cooked they’ll crisp up and add a bit more interest visually.

7. Place in oven and immediately reduce heat to 140˚C (280 F). Cook for 1hr to 1hr15mins. Do not open the oven door whilst the pavlova is cooking.

8. You’ll know when the pavlova is cooked when it looks crisp at the edges which will have started to crack slightly. The top will be dry but if you press on the underside it’ll give a little as the centre should be still a little squishy/soft. Place the pavlova back in the oven and leave the door slightly ajar, leave the pavolva to cool completely inside.

9. When it is cool, I place one disc on a serving platter or cake stand and spoon a big wallop of cream on top, scatter a good handful of fresh raspberries onto the cream and then place the second meringue disc on top. Again pile on a good amount of cream and the remainder of the raspberries. Sprinkle with finely chopped chocolate and serve.

Yes, you read right…”Back to School Session”!! Ok, so its only taken several months to get this post up! That’s usually the way things go with photographers and their personal images. We somehow manage to neglect our own photos, putting off the editing, putting off the printing, etc. This year, I’ve made a promise to try and be more on top of my personal images! So with that, here is my lovely stepdaughter! A little girl that has blossomed into a young lady practically overnight! No, she’s not wearing my clothes. Yes, she is almost as tall as me. Yes, thankfully she still isn’t into boys…yet! Yes, she’s stunning, and could be a little model! Here she is…

My love for this child grows everyday. There is no harder job on the planet than being a step parent. We are often over looked, pushed aside, not taken seriously, and not thought of as a “real parent”. We are under-appreciated and overworked. But WE know that the job we’re doing isn’t one that we have to do. Instead, we do it because we want to. We took on the role with full knowledge of how hard it would be, and we do it anyway. To all you step parents out there…CHEERS!

About 1 week after the marathon we will meet for your personalized View & Order session, where you will choose the images you’d like for your book and order any additional items. Then you can pick up your book about 2 weeks after that.

Can I get my Images on a CD?

January Recipe // Braised Chicken with Lemon & Capers

I’m going to have to steal Rachael Ray’s favorite saying to describe this one – YUMMO!!! I’ve decided that my love for cooking should be shared, not because I want to show off my mad culinary skills (ha ha!), but because I love food, I understand food, I love cooking, and most of all I think I can be helpful in inspiring even the worst cook to want to get in the kitchen! For me, its not all about measuring and being precise. Its about trying new flavors, tasting, enjoying, and coming up with my own take on recipes. So relax, grab a glass of wine and channel that inner-creative that I know is in you…AND LET’S COOK!

First of all, before we delve into the recipe, lets talk for a minute about capers. Why is everyone so afraid of the precious, little, salty wonders? Don’t be! Now, I certainly wouldn’t grab a spoon and dig in, but used in moderation in conjunction with the appropriate recipes, they can be a delightfully unexpected flavor. If you are asking yourself, “What the heck is a caper???!!”, well then I’ll explain, best I can, what they are. They can be found in any grocery store in the same isle as the pickles. Sometimes you have to have a sharp eye to spot them because they come in a very tiny jar. They look like miniature green olives. They are salty. Enough said. Most are imported from Turkey, and bottled in the USA. What else can I say? Go run out and pick up a jar!

This recipe was found on Pinterest, courtesy of theurbanspork.com. I have to say, if you are living under a rock and you haven’t discovered Pinterest yet, GO CHECK IT OUT! It is amazing and you will find me talking about it a lot on my blog and Facebook.

You will notice that I add in my own notes to recipes, so you can see how I changed it to suit my needs. Sometimes I don’t have all the ingredients, and that’s OK! I just substitute for something else or omit it. The point is, don’t be afraid, its just a recipe…and in my opinion, its not meant to be followed! (Now Baking is a completely different story. Don’t follow a cake recipe to-the-t and you’ll end up with a disaster. Just sayin’)

Braised Chicken with Lemon & Capers

Ingredients: (4 servings)

  • 2 bone-in chicken thighs with skin (6 ounces each) **I used skinless, boneless thighs because it’s what I had and my family prefers boneless.
  • 2 chicken breasts with skin (6 ounces each) **omitted.
  • all-purpose flour for dusting
  • salt and freshly ground pepper
  • 1 tablespoon unsalted butter **Don’t be afraid of butter! Even when being health concious, a little butter can go a long way with flavor and isn’t going kill ya!
  • 1 tablespoon extra-virgin 0live oil
  • 3 large peeled garlic cloves
  • 3/4 cup Sauvignon Blanc **Have kids? Don’t Worry! The alcohol cooks off. (My stepdaughter thought this was so weird when she first started to cook with me!)
  • 3/4 cup chicken stock
  • 3 1-inch strips of lemon zest **I cut slices of lemon instead to get the oils and intense flavor from the zest as well as the juice from the lemon.
  • 4 thyme springs **If you don’t have fresh thyme, no biggy, just used dried and be sure to rub it between your fingers as you add it to the pot to “wake up” the flavor.
  • 2 teaspoons capers, drained
  • 2 bay leaves

Directions:

Preheat the oven to 350°F.  Season the chicken with salt and pepper and dust with flour.  In a large ovenproof skillet, melt the butter in the oil.  Add the chicken, skin side down, and cook over high heat, turning once, until browned (12 to 14 minutes).  Transfer the chicken to a large plate and pour off all but 1 tablespoon of the fat. **When using skinless, boneless there won’t be much fat. :-)

Add the garlic to the skillet and cook over low heat until softened, about 5 minutes.  Add the wine and boil over high heat until reduced by half, about 5 minutes.  Add the stock, lemon zest, thyme, capers and bay leaves and bring to a boil. Return the chicken to the pan, skin side up.  Transfer the skillet to the oven, cover and braise for 30-35 minutes, until the meat is tender.

Remove chicken, then return the skillet to the stove and boil until the sauce is slightly reduced, about 5 minutes. Discard the thyme, bay leaf and lemon zest before serving. **Don’t forget this last step! No one likes sticks in their food!
PS: I leave in the lemon slices; you can eat them too! It’s a zingy treat to bite into with your chicken!

Serve with fingerling, or mashed potatoes and your favorite vegetables.

Remember, when cooking, try to ENJOY IT. Don’t get stressed about measuring EXACTLY 1 tablespoon of garlic, just eyeball it! If you aren’t comfortable with that, trust me, the more you do it, the better you’ll get at judging what a tablespoon looks like. I just dump right out of the jar into my hand (which horrifies my Mom, by the way!)

1970′s Ebay dress transformed // My Wedding Dress

I’ve had a lot of people ask me about my wedding dress. I had no idea it would get this much attention. So I thought I’d share with you the process from start to finish, from concept to completion – My Perfect Wedding Dress.

First, I was on a budget. And I didn’t have a ton of time. My head was swirling with ideas and it took some time to actually find a photo that depicted the idea that was in my head. Problem was, this perfect dress of mine was found online via a dress designer in Spain called Yolan Cris. AMAZING dress. Like drooling on my keyboard, dancing around my office, emailing all my girlfriends kind of amazing. And, the dress was in like the 8K range. Just a tad bit out of my budget. This is OK, I thought. I’ll make it. HA! This is my usual thought process, by the way. If I can’t find it or buy it, I’ll make it. I was confident. I was determined. So thus began the search for how-the-heck-am-I-going-to-make-my-own-dress! First stop, Ebay. I knew the style I was looking for, so all I had to do was find it. But it turns out that is a whole lot easier said than done. There are millions of dresses on Ebay. The search did bring lots of laughter though, as a ton of people were selling their 80′s puffy sleeve, absolutely hideous dresses, some asking 100′s or even 1000′s for a dress that I don’t think anyone would be caught dead in! I saved favorites, emailed people, talked to seamstresses….and 2 months later was no closer to finding my dress. I had to change gears. Turns out I was looking in all the wrong places. Now, I’m no sewing master, but I know the basics. So what I began to look for was certain elements of the dress that I liked and certain elements that could be changed to suit my needs. Turns out, 99% of the dresses that fit into this category were vintage 1950 – 1970 dresses. So the bidding began. I knew that I needed to keep my upfront cost low because I was going to be paying a seamstress to “fix” it. And then I saw  it. It was magnificent in its 1970′s glory with long sleeves and a high neck. It was mine! I bid, I won. YAY! Now what?

This is where the real story began, because before I actually had the dress in hand, I showed my seamstress a photo of the Ebay dress and a photo of a “montage” dress that I had photo-shopped together using the top half of the lovely Yolan Cris dress, along with bottom half of the Ebay dress. She was so confused. After a bit of explaining, I think she got it, but still thought I was crazy. When the dress arrived, I tried it on, had a few laughs, and rushed it down to the seamstress, with 6 weeks left before my wedding day. I refreshed her memory with the images and the “weird photo-shopped image”, and before I knew it I was in the dress and she was coming at me with scissors! It takes a lot of guts to stand in a dress you just bought on Ebay with a seamstress you’ve met twice, to let her “go for it”. And it began. As I was looking in the mirror at her literally cutting the dress right off of me, I couldn’t believe what I was doing! HOLY CRAP. Before I knew it, less than 2 minutes later, she turned me around to face the mirror. HOLY CRAP. Then tears.

There’s not much more to say, other than after 3 more fittings to get it just right, my vision became reality and here it is…

All of the lace that was cut off the dress was re-used to make the belt and the edging along my bust line and down my back. Nothing new was added to the dress with the exception of a lining.

Jennifer Kerns // Editorial Session

Jennifer, a vivacious gal with platinum blond hair, wanted edgy, documentary, paparazzi-style images as well as a few non-traditional head shots. She needed to emphasize her busy lifestyle and her passion for her business. So the stage was set; Starbucks, all her on-the-go essentials, and a delightful surprise…an amazing field of yellow flowers overlooking the airport! Yes, I made Jennifer trudge through the weeds in her amazing high heels (sorry!), and this first image, one of my favorites, was the amazing result! Now, don’t you want THIS for your “about me” page??? I know I would! No more boring head shots with the standard grayish-blue background, lit just right, taken just below the shoulders! If you want an image to draw your readers in and see your PERSONALITY, then this type of session is for you! Whether you’re a chiropractor or a yoga instructor, chances are you have a website or a blog. So let’s put an end to the “standard head shot”!!
